Bakery Production Manager
Position Overview:
As the Bakery Production Manager at Hester’s Cafe, you’ll drive the department to excellence, ensuring operations are safe and efficient and fully aligned with our heartfelt values and vibrant culture. With your hands-on leadership and deep understanding of bakery production, you’ll be the cornerstone of our success. You won’t just oversee; you’ll actively engage and have the ability to jump in at any workstation, making a direct impact every day.
Managers hold themselves and all teammates accountable to Hester’s Cafe safety, culture, and employee conduct standards and they must address any product, equipment, and team issues in accordance with Hester’s Cafe policy.
Managers take ownership and responsibility for their department and embody the work ethic, curiosity, gritty determination, honesty, and humility that are at the core of Hester’s Cafe management principles. They ask for consent, build consensus, and never use coercion to lead their team.
This role reports to the Owners of Hester’s Cafe.
Hours:
This is a full-time role with a five-day workweek from 5:15 a.m. to 3:30 p.m. We strive to make schedules as manageable as possible to encourage and allow work-life balance.
Requirements:
Duties & Responsibilities
Duties, responsibilities, and essential job functions include but are not limited to the following:

- Directing the bakery production team to execute all production tasks efficiently, effectively, and safely
- Being responsible for the quality control process in producing, baking, and finishing all goods, ensuring products are up to Hester's Cafe standards
- In partnership with the General Manager, assist with production and operational planning, including effectively and efficiently managing labor expenses and waste.
- Address issues promptly, support the management team and staff, and ensure timely, accurate work completion.
- Communicate delays or product issues quickly while enforcing safety and food safety standards.
- Manage weekly orders for efficient production.
- Supervise and maintain inventory.
- Handle scheduling and staffing, collaborating with owners and management team on hiring and team development.
- Use a hands-on, side-by-side approach to train and develop all team members in accordance with the company’s training standards.
- Keep training materials updated and provide feedback on protocols.
- Master equipment operations, Hester’s Café Big Kitchen recipes, and troubleshooting.
- Ensure products meet specifications and maintain equipment. Collaborate on quality improvements, safety, and efficiency while tracking production performance and minimizing waste.
Job Requirements:
- Exceptional attention to detail and organizational skills.
- Excellent interpersonal skills, communication skills, time management skills, and self-motivation.
- Capability to stand for long periods and perform physically demanding tasks in environments with high levels of heat and cold.
- Knowledge of laminated doughs, quick breads, cookies, etc.
- Proven experience in managing diverse teams in a fast-paced setting.
- Comprehensive knowledge of food safety, equipment operation, and bakery production techniques.
- Ability to back up any production workstation, ensuring continuous operation.
- Flexibility to work holidays, weekends, and additional hours as needed.
- Ability to stay calm and focused when dealing with individuals who exhibit behavior that does not comply with our policies and rules.
- ServSafe Manager certified.
Position Requirements
- Pastry or Culinary Degree preferred with 3+ years of experience in bakery or food production, with at least 2+ years in a lead or management role
- Strong knowledge of bakery operations
- Understanding of budgeting and cost control
- Excellent personnel management skills and ability to lead and train a team
- Strong problem-solving and analytical skills, with experience in root-cause analysis
- Ability to multi-task in a fast-paced, high-volume production bakery
- Ability to direct and manage a team of bakers through kind and empathetic leadership
- Must have financial literacy; Ability to understand and learn from financial reports.
Physical Functions
• Must have the ability/stamina to work at least 50 hours a week.
• Ability to stand/walk for 10 hours per day.
• Must exert well-paced and frequent mobility for up to five hours.
• Ability to lift up to 10 pounds frequently and up to 50 occasionally.
• Will frequently reach, feel, bend, stoop, carry, finely manipulate, and key in data.
Compensation:
Hester’s Café is deeply committed to ethically balancing the demands of the business and paying a living wage to all those who contribute to our success. This position pays $48,000-$55,000 per year plus bonus.

At Hester’s Café, the business model follows the basic principles of the family unit – service in the community, food for nourishment, and time for fellowship. They value everyone who walks through their doors, patron and employees alike. Fostering a Christian environment, Jason and Hester close shop on Sundays to allow employees time for rest, family and fellowship. But come Monday, they open the doors wide open to welcome the community in for a home cooked meal.
