SUMMARY:
This position assists cooks and pantry attendants by preparing raw food items by peeling, cutting, chopping, dicing, slicing meats vegetables and other food products. Ensures workstation is clean, sanitized, food items are labeled, dated and rotated. All duties are to be performed in accordance with departmental and property policies, practices, and procedures.
ESSENTIAL SKILLS, DUTIES & RESPONSIBILITIES:
- Washes and peels vegetables.
- Prepares meats, vegetables, and other food items as prescribed by the standardized recipe.
- Portion meats and vegetables and other food items to proper weights or volumes.
- Restocks hot line and pantry line with food products insuring proper wrapping, dating,
- and rotation of product to ensure quality of product.
- Clean and sanitize workstation.
- Assist cooks and pantry attendants in duties.
- Assists cooks in the making of sauces, soups, vegetables, gravies, and entrees following standardized recipes.
- Assists in training and supporting of new employees. Attend training, safety, pre-shift, and departmental meetings as scheduled. Perform side work as directed by management.
- To perform this job successfully, an individual must be able to perform each duty satisfactorily.
- Performs miscellaneous duties as required.
MINIMUM QUALIFICATIONS:
- 6 months experience in institutional food preparation including knife motor skills.
- Ability to read and use standardized institutional recipes.
- Have a thorough knowledge of all institutional kitchen equipment and their proper use and care.
- Perform any general cleaning tasks using authorized, institutional labeled cleaning products as assigned to adhere to health and safety standards.

EDUCATION:
- High School diploma or GED
LICENSE REQUIREMENTS:
Must be able to successfully pass a pre-employment drug screen, background investigation, and maintain a Pauma Gaming Commission License.
PHYSICAL/MENTAL REQUIREMENTS: (*Constantly, Frequently, Occasionally)
- Ability to lift 50 pounds.
- Ability to stand during entire shift.
- Constantly walking and standing.
- Constant hearing, seeing, and talking.
- Constantly balancing, bending, reaching, twisting, holding, wrist motion, and stooping.
WORKING CONDITIONS:
- Work is performed indoors in a climate-controlled environment.
- Close spaces while working with others.
- Excessive noise, smoke and exposure to chemicals.
